“I cook with wine, sometimes I even add it to the food.”
Wine is inseparable from food in Terry’s world. Choosing wines which are interesting , and very importantly reflecting the taste of the grape variety, and the terroir, is part of his raison d’être. The wines are often produced by artisans, and usually from relatively small estates. He has become friends with a number of winemakers from different parts of the globe, sharing and appreciating their passion. It is not unusual to see him lunching at Friends with a vigneron from the Rhone Valley or even from further afield, such as The Malborough region of New Zealand.
Terry is also a proud supporter of the English wine producers, notably the Brightwell Vineyard, the largest in Oxfordshire, on the beautiful banks of the Thames in Wallingford. Their wines feature on the list, alongside distinctive bottles from the New World and some classics from the Old World.
